Department:                          Kitchen

Reports to:                            Executive Sous Chef – Chef de Cuisine

Responsible for:                   Cooks/Commis

PURPOSE OF THE JOB

Responsible for the smooth running of the operation in his station and managing of staff. Replace kitchen chef as and when needed.

MAIN RESPONSIBILITIES:

  • Follow the rules defined by Executive Chef and assure consistency in following these rules.
  • Fully adhere to responsibilities listed on the job description.
  • Prepare the work plan for the department and follow this program.
  • Train the team “on the job” at all times.
  • Provide the needs cold/hot kitchen needs during lunch, dinner and other banquest service times.
  • Responsible for the cleaning, hygiene and sanitation of the storage, fridge etc. in his area.
  • Train the staff on hygiene restrictions during food preparation.
  • Make daily preparations for the general kitchen operation.
  • Make sure that the products which are cooked are served on time.
  • Follow up on developments about his career.
  • Follow up on technical developments and new methods to increase the efficiency of the main kitchen and train the team on these.
  • Assure safe and clean usage and maintenance of the equipment and machinery in the kitchen.
  • Make list of goods to be purchased from the market and inform kitchen chef.
  • Report any unexpected incidents in the kitchen to kitchen chef.
  • Adhere to fire health and safety regulations in the kitchen and make sure the team is well informed and follow.
  • Adhere to hotels procedures and general legislation.
  • Use all the kitchen equipment and machinery safely and make sure that the staff use it properly too.
  • Maintain neat and clean attire in line with Access grooming standards. Report to work on time in neat and clean uniform with self-hygiene taken care of.
  • Have good communication and work in good cooperation with colleagues.
  • Undertake any other responsibilities assigned by the Executive Chef.

QUALIFICATIONS:

Education: Minimum high school graduate

Experience: Minimum 3 years of similar experience as Chef de Partie at in a reputable restaurant.

Other Qualifications: Has excellent knowledge on kitchen operation, food production and hygiene, good level of written and spoken English. Able to use MS office programs, skilled in planning and organization, has good interpersonal relationships, skilled in managing, focused on guest satisfaction and quality standards.
